Rattan proofing baskets or bannetons are popular in artisan baking, to give a rustic and traditional feel. The baskets are used to support and shape the dough while it rises during the fermentation process. Made from coiled rattan it gives a spiral pattern on the dough which is a popular characteristic of handmade loaves.
