A bread lame (pronounced “lahm”) is the tool bakers use to slash the surface of dough just before it goes into the oven. Those cuts are not just decorative – they control how the loaf expands during baking, giving you the crisp golden peaks and valleys that define a good artisan crust. Done well, scoring also improves the texture and flavour of the finished bread by directing where steam escapes during the bake.
The Daily Bake Bread Lame features a sustainable beechwood handle shaped for a comfortable grip, and comes with five standard stainless steel blades. The curved blade profile is designed to produce the classic “ear” that marks a well-scored loaf. At 185mm long, it gives you enough reach and control to score confidently without dragging through the dough.

Ensure the blade is sharp before starting. Hold the lame at approximately 30 degrees against the dough surface and score about 5mm deep to create the traditional “ear” shape. Cut gently without applying too much pressure or going too deep. If the blade sticks to the dough, wet it between cuts. When the blade dulls, turn it or replace it with a fresh one for cleaner results.
Wipe clean with a damp cloth. Handle with care – blades are sharp.
