Shun Classic Boning Knife 15cm
A 150mm Shun Classic boning knife with a narrow, curved blade for deboning meat and filleting fish.
The Shun Classic Boning Knife gets in close to the bone to separate meat cleanly. It cuts through fibrous tissue and trims silver skin from a tenderloin or roast. It also prepares cutlets with control.
The narrow blade reduces drag through the meat. For fish, the length suits filleting and removing bones and skin.
Features
- Narrow Curved Blade – Follows the bone closely and reduces drag through meat.
- VG-MAX Core – Kai’s proprietary VG-MAX steel forms the cutting edge, hardened to 60 HRC.
- Damascus Cladding – 34 stainless Damascus layers each side are ground and bead-blasted to reveal a flowing pattern.
- 16° Hand-Sharpened Edge – Each side is sharpened by hand to 16° for a fine, clean cut.
- D-Shaped PakkaWood Handle – Ebony-toned PakkaWood fills the curl of the fingers for a secure grip. The D-shape suits right-handed users.
