Kai Shun Premier Bread Knife 230mm
The Shun Premier Bread Knife 230mm is a serrated Japanese bread knife for cutting crusty and soft loaves without crushing them. It has a VG-MAX Damascus blade.
How the Serrations Work
The blade has wide serrations, spaced further apart than a standard saw-tooth edge. Shun calls these low-frequency serrations. They saw gently through bread with less crushing and fewer crumbs than a plain edge. The knife also suits cakes and pastries.
About Shun Premier
Shun Premier knives have thin, light blades for fast, nimble handling. Each blade has a VG-MAX steel core clad in 34 layers of stainless Damascus on each side. A wavy line called a hamon forms where the steels meet. The hand-hammered tsuchime finish helps food release from the blade.
Features

- Hand-Sharpened Edge – 16° double-bevel edge, sharpened by hand.
