Kai Shun Premier Nakiri Knife 140mm
The Shun Premier Nakiri Knife 140mm is a Japanese vegetable knife with a straight edge and blunt tip. It has a VG-MAX Damascus blade with a hand-sharpened 16° edge.
What Is a Nakiri Knife?
Nakiri means vegetable knife in Japanese. The straight edge and spine are made for push cuts, not rocking. Move the knife down and forward with the edge parallel to the board. It suits slicing and dicing vegetables for salads and stir-fries.
About Shun Premier
Shun Premier knives have thin, light blades for fast, nimble handling. Each blade has a VG-MAX steel core clad in 34 layers of stainless Damascus on each side. A wavy line called a hamon forms where the steels meet. The hand-hammered tsuchime finish helps food release from the blade.
