Kai Shun Premier Santoku Knife 180mm
The Shun Premier Santoku Knife 180mm is a Japanese all-purpose kitchen knife suited to push cuts. It has a VG-MAX Damascus blade with a hand-sharpened 16° edge.
What Is a Santoku Knife?
A santoku is the Japanese counterpart to the chef’s knife. It works best with a down-and-forward push cut. The 18cm blade is slightly shorter than a standard chef’s knife, so it is light and easy to manoeuvre. A gentle belly curve still allows rocking cuts.
About Shun Premier
Shun Premier knives have thin, light blades for fast, nimble handling. Each blade has a VG-MAX steel core clad in 34 layers of stainless Damascus on each side. A wavy line called a hamon forms where the steels meet. The hand-hammered tsuchime finish helps food release from the blade.
