Kai Shun Premier Slicing Knife 240mm
The Shun Premier Slicing Knife 240mm is a long, narrow Japanese slicer for carving thin, even slices of meat and fish. It has a VG-MAX Damascus blade with a hand-sharpened 16° edge.
What Is a Slicing Knife Used For?
The long blade lets each slice be made in one stroke, without sawing back and forth. Its narrow profile reduces drag through the meat. It suits roasts, ham and fish, including sashimi.
About Shun Premier
Shun Premier knives have thin, light blades for fast, nimble handling. Each blade has a VG-MAX steel core clad in 34 layers of stainless Damascus on each side. A wavy line called a hamon forms where the steels meet. The hand-hammered tsuchime finish helps food release from the blade.
