Kai Shun Premier Kiritsuke 200mm
The Shun Premier Kiritsuke 200mm is a Japanese master chef’s knife with a straighter edge for slicing and push cuts. It has a VG-MAX Damascus blade with a hand-sharpened 16° edge.
What Is a Kiritsuke Knife?
The kiritsuke covers the same tasks as a chef’s knife. Its straighter edge suits julienne, dice and brunoise cuts on vegetables. It is also well suited to trimming and portioning boneless proteins, especially fish, and to slicing cooked meats.
About Shun Premier
Shun Premier knives have thin, light blades for fast, nimble handling. Each blade has a VG-MAX steel core clad in 34 layers of stainless Damascus on each side. A wavy line called a hamon forms where the steels meet. The hand-hammered tsuchime finish helps food release from the blade.
